Coming from young and old vines, this wine in traditional method is mainly produced using the natural sugar from the grapes. Alcoholic fermentation takes place in temperature-controlled fiber tanks and is stopped at 18g of residual sugar. Between 10 and 15% of reserve wine is added before bottling. The second fermentation takes place in the bottle, with aging on racks for 12 to 24 months. After disgorging, this wine is not dosed.

Traditional method without dosage, aged on racks for 12 to 24 months.
Expressive nose with notes of peach and white flowers; delicate and persistent on the palate, with subtle aromas of toasted almonds. A wine with fine bubbles, fresh and crisp.
Ideal as an aperitif with appetizers (avocado and shrimp blinis, smoked salmon and cucumber bites), it also pairs well with stuffed calamari or fried fish fillets.
Serve chilled (40-50°F), drink within 5 to 10 years.
